Leaves of Stevia contain key compounds called steviol glycosides. These glycosides are of four types, namely Stevioside, Rebaudioside A, Rebaudioside C and Dulcoside. Sweet characteristics are attributed to Stevioside and Rebaudioside A, while the other compounds impart a bitter or liqourice aftertaste to the leave.
